Tomato-cheddar Bread

Ingredients

  • 3 cups baking mix
  • 1 cup shredded cheddar cheese
  • 2 eggs, Lightly Beaten
  • 1/3 cup milk
  • 1 (14 1/2 ounce) can diced tomatoes with juice

Directions

  • 1 Heat Oven to 350 Degrees.
  • 2 Coat two 8 1/2 x 4 1/2 x 2 1/2- inch loaf pans with non-stick cooking spray.
  • 3 Stir together baking mix, shredded cheese and salt to taste in a large bowl.
  • 4 Make well in center of mixture.
  • 5 Add eggs, milk and tomatoes to well.
  • 6 Stir just until the dry ingredients are moistened.
  • 7 Divide batter evenly between the pre-pared loaf pans.
  • 8 Bake for 45 minutes or until a toothpick inserted comes out clean.
  • 9 Cool pans on rack 5 minutes.
  • 10 Turn out of pans.
  • 11 Serve warm.
