Creamy Ginger Miso Dressing

Ingredients

  • 4 ounces silken tofu
  • 2 tablespoons light miso
  • 1 tablespoon rice vinegar
  • 1 tablespoon chopped scallion
  • 2 teaspoons grated gingerroot
  • 1/3 cup orange juice
  • 1 teaspoon soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon dark sesame oil

Directions

  • 1 Combine all of the ingredients in a blender or food processor and puree until smooth.
  • 2 Coverd and refrigerated, this dressing will keep for about a week.
  • 3 Enjoy!
