Dried Fruit and Coconut Macaroons

Ingredients

  • 1 cup dried fruit (apricot, raisins, cranberries, etc)
  • 2 cups sweetened coconut
  • 1/2 cup sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 3 egg whites
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts or 1 cup almonds or 1 cup macadamia nuts

Directions

  • 1 Preheat over to 325, lightly grease cookie sheet.
  • 2 Coarsley chop the dried fruit.
  • 3 Combine coconut, sugar, flour and salt; stir in egg whites and vanilla.
  • 4 Fold in fruit and nuts.
  • 5 Drop by rounded teaspoonfuls onto prepared cookie sheet.
  • 6 Bake 15 minutes.
  • 7 Immediately remove the macaroons to a rack to cool.
  • 8 Repeat with remaining dough.
