Dried Fruit and Coconut Macaroons

Ingredients
- 1 cup dried fruit (apricot, raisins, cranberries, etc)
- 2 cups sweetened coconut
- 1/2 cup sugar
- 3 tablespoons flour
- 1/4 teaspoon salt
- 3 egg whites
- 1 teaspoon vanilla
- 1 cup chopped walnuts or 1 cup almonds or 1 cup macadamia nuts
Directions
- 1 Preheat over to 325, lightly grease cookie sheet.
- 2 Coarsley chop the dried fruit.
- 3 Combine coconut, sugar, flour and salt; stir in egg whites and vanilla.
- 4 Fold in fruit and nuts.
- 5 Drop by rounded teaspoonfuls onto prepared cookie sheet.
- 6 Bake 15 minutes.
- 7 Immediately remove the macaroons to a rack to cool.
- 8 Repeat with remaining dough.
