Scotch Eggs

Time: 40 mins

Ingredients

  • 1 lb bulk pork sausage
  • 6 hard-boiled eggs, peeled
  • 1 egg, lightly beaten
  • 3/4 cup crushed corn flakes

Directions

  • 1 Divide the sausage into six portions; flatten each.
  • 2 Shape each portion around an egg.
  • 3 Roll in beaten egg then in cornflake crumbs.
  • 4 Place ona rack in a baking pan and bake uncovered at 400 for 30 minutes or until meat is no longer pink, turning every 10 minutes.
