Marinated Asparagus

Time: 15 mins

Ingredients

  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon pepper
  • 1 lb fresh asparagus
  • 1/3 cup chopped tomato

Directions

  • 1 Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.
  • 2 Cut ends off asparagus.
  • 3 Cook asparagus in a large pot of simmering water for 4 minutes.
  • 4 Drain and put in an ice bath.
  • 5 Remove asparagus to a platter and top with chopped tomato.
  • 6 Pour vinaigrette on asparagus.
  • 7 Chill until ready to serve.
