Savory Scrambled Eggs

Ingredients

  • 8 large eggs
  • 2 tablespoons water
  • 1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil
  • 1/8 teaspoon salt (or to taste)
  • fresh ground pepper
  • 1 medium tomato, seeded, diced, and drained
  • 6 green onions, sliced (include some of the green part)
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/4 cup light sour cream

Directions

  • 1 In a mixing bowl, whisk the eggs, water, basil, salt, and pepper together.
  • 2 Fold in tomato and green onion.
  • 3 Melt the butter in a large nonstick skillet over medium heat; swirl to coat bottom of pan.
  • 4 When butter foams, add egg mixture all at once.
  • 5 Let set for 20 seconds.
  • 6 Cook, stirring, for 3-4 minutes or until light, fluffy, and almost dry.
  • 7 Add sour cream and stir until blended.
  • 8 Serve right away.
