Savory Scrambled Eggs

Ingredients
- 8 large eggs
- 2 tablespoons water
- 1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil
- 1/8 teaspoon salt (or to taste)
- fresh ground pepper
- 1 medium tomato, seeded, diced, and drained
- 6 green onions, sliced (include some of the green part)
- 1 tablespoon butter or 1 tablespoon margarine
- 1/4 cup light sour cream
Directions
- 1 In a mixing bowl, whisk the eggs, water, basil, salt, and pepper together.
- 2 Fold in tomato and green onion.
- 3 Melt the butter in a large nonstick skillet over medium heat; swirl to coat bottom of pan.
- 4 When butter foams, add egg mixture all at once.
- 5 Let set for 20 seconds.
- 6 Cook, stirring, for 3-4 minutes or until light, fluffy, and almost dry.
- 7 Add sour cream and stir until blended.
- 8 Serve right away.
