Sugar Glazed Carrots
Time: 25 hrs
Ingredients
- 7 lbs baby carrots
- 3 cups water
- 2 cups firmly packed brown sugar
- 3 tablespoons orange juice concentrate
Directions
- 1 Clean and peel carrots.
- 2 Cut into 2 inch pieces.
- 3 Combine water and brown sugar.
- 4 Put carrots in another pan and bring to a boil; cook for 10 minutes.
- 5 With the brown sugar, simmer till sugar is dissolved. Simmer for 5 minutes.
- 6 Add orange juice concentrate; reduce heat and keep hot.
- 7 Using slotted spoon, drain carrots and pack into hot jars, leaving 1 inch head space.
- 8 Ladle hot syrup into jars covering carrots and leaving 1 inch head space
- 9 Remove any trapped air bubbles
- 10 You may need to add more syrup.
- 11 Process jars at 11 lbs pressure for 30 minutes.
