Sugar Glazed Carrots

Time: 25 hrs

Ingredients

  • 7 lbs baby carrots
  • 3 cups water
  • 2 cups firmly packed brown sugar
  • 3 tablespoons orange juice concentrate

Directions

  • 1 Clean and peel carrots.
  • 2 Cut into 2 inch pieces.
  • 3 Combine water and brown sugar.
  • 4 Put carrots in another pan and bring to a boil; cook for 10 minutes.
  • 5 With the brown sugar, simmer till sugar is dissolved. Simmer for 5 minutes.
  • 6 Add orange juice concentrate; reduce heat and keep hot.
  • 7 Using slotted spoon, drain carrots and pack into hot jars, leaving 1 inch head space.
  • 8 Ladle hot syrup into jars covering carrots and leaving 1 inch head space
  • 9 Remove any trapped air bubbles
  • 10 You may need to add more syrup.
  • 11 Process jars at 11 lbs pressure for 30 minutes.
