Easy Cheesy Frittata

Time: 40 mins

Ingredients

  • 4 eggs
  • 4 egg whites
  • 2 tablespoons water
  • 1/2 cup chopped seeded tomato
  • 1 cup shredded reduced-fat mozzarella cheese, divided
  • 2 slices bacon, crisply cooked and crumbled
  • 1/4 cup chopped fresh basil

Directions

  • 1 Preheat oven to 350.
  • 2 Beat eggs, egg whites and water in a medium bowl with a wire whisk until well blended.
  • 3 Stir in tomatoes, 1/2 cup of the cheese, the bacon and basil.
  • 4 Pour into greased 9-inch pie plate.
  • 5 Bake 25 minutes or until puffed and golden brown.
  • 6 Sprinkle with remaining cheese and bake an additional 5 minutes or until cheese is melted.
