Mexican Black Beans

Time: 40 mins

Ingredients

  • 6 slices bacon, chopped
  • 1 cup chopped onion
  • 1 jalapeno pepper, seeded and finely diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14 1/2 ounce) can tomatoes (I use petite diced tomatoes)
  • 1 teaspoon garlic salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons lime juice

Directions

  • 1 Saute bacon until crisp, then set aside.
  • 2 Drain all except 1 T bacon grease.
  • 3 Saute onion and jalapeno in remaining bacon grease.
  • 4 Add all remaining ingredients except bacon and simmer until beans are hot and tomatoes have reduced a bit.
  • 5 Top with bacon pieces.
  • 6 If you like more spice you can either leave some seeds in the jalapenos or add a pinch of cayenne pepper.
