Mexican Black Beans

Ingredients
- 6 slices bacon, chopped
- 1 cup chopped onion
- 1 jalapeno pepper, seeded and finely diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14 1/2 ounce) can tomatoes (I use petite diced tomatoes)
- 1 teaspoon garlic salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 2 tablespoons lime juice
Directions
- 1 Saute bacon until crisp, then set aside.
- 2 Drain all except 1 T bacon grease.
- 3 Saute onion and jalapeno in remaining bacon grease.
- 4 Add all remaining ingredients except bacon and simmer until beans are hot and tomatoes have reduced a bit.
- 5 Top with bacon pieces.
- 6 If you like more spice you can either leave some seeds in the jalapenos or add a pinch of cayenne pepper.
