Shitake Miso Soup

Ingredients
- 2 scallions
- 4 ounces tofu, small cubes (~ 0.5 cup)
- 6 teaspoons soy sauce
- 1 cup sliced shitake mushroom
- 4 cups water
- 4 tablespoons miso
Directions
- 1 In a sauce pan combine soy sauce, tofu and scallions.
- 2 Bring to a boil, reduce heat, cover and let simmer for 15 minutes.
- 3 Add mushrooms and water, bring to a boil.
- 4 Once boiling vigorously, bring down to a simmer and add mushrooms.
- 5 Simmer until mushrooms reach desired tenderness.
- 6 Add Miso, mix until dissolved, serve.
