Marinated Asparagus
Time: 15 mins
Ingredients
- 2 tablespoons fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 1/8 teaspoon pepper
- 1 lb fresh asparagus
- 1/3 cup chopped tomato
Directions
- 1 Mix basil, oil, vinegar, salt, sugar and pepper. Set aside.
- 2 Cut ends off asparagus.
- 3 Cook asparagus in a large pot of simmering water for 4 minutes.
- 4 Drain and put in an ice bath.
- 5 Remove asparagus to a platter and top with chopped tomato.
- 6 Pour vinaigrette on asparagus.
- 7 Chill until ready to serve.
